Ingredients

  • 4 pounds Beef brisket
  • 2 tablespoons Kosher salt
  • 1 tablespoon Black pepper, freshly ground
  • 2 teaspoons Paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 2 tablespoons Brown sugar
  • 2 tablespoons Olive oil
  • 2 cups Beef stock
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Tomato paste
  • 1 large Yellow onion, thinly sliced
  • 3 large Carrots, peeled and cut into chunks
  • 2 pieces Bay leaves

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the salt, black pepper, paprika, garlic powder, onion powder, and brown sugar to create a spice rub.

Step 3

Pat the brisket dry with paper towels and rub the spice mixture evenly over both sides of the meat.

Step 4

Heat the olive oil in a large heavy-duty oven-safe pot or Dutch oven over medium-high heat. Sear the brisket for 4-5 minutes on each side until it is browned. Remove the brisket and set it aside.

Step 5

In the same pot, add the sliced onion and cook for 2-3 minutes until softened. Stir in the tomato paste and cook for another minute.

Step 6

Pour in the beef stock and Worcestershire sauce. Bring the mixture to a simmer while scraping the bottom of the pot to deglaze and release any browned bits.

Return the brisket to the pot, fat side up. Add the carrots and bay leaves around the meat.

Cover the pot with a tight-fitting lid and transfer it to the preheated oven. Cook for 4-5 hours, or until the brisket is fork-tender.

Step 9

Check the brisket every 2 hours, spooning some of the cooking liquid over it to keep it moist.

Step 10

Once cooked, remove the brisket from the pot and let it rest on a cutting board for 15 minutes. Slice the brisket against the grain into thin slices.

Step 11

Serve the brisket with the carrots and cooking liquid spooned over the top. Enjoy!
