Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 1 cup BBQ sauce
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 pieces Roma tomatoes
  • 1 medium Red onion
  • 1 piece Jalapeño pepper
  • 2 tablespoons Cilantro (chopped)
  • 2 tablespoons Lime juice (freshly squeezed)
  • 0.5 teaspoon Salt (for salsa)
  • 0.25 teaspoon Black pepper (for salsa)

Directions

Step 1

Preheat your grill to medium-high heat (about 400°F/200°C).

Step 2

Prepare the chicken by patting the pieces dry with paper towels.

Step 3

In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper. Rub this mixture evenly over the chicken thighs.

Step 4

Place the chicken on the grill, skin side down. Cook for 6-7 minutes until the skin is golden and crispy. Flip the chicken and cook for another 6-7 minutes on the other side.

Step 5

Brush a generous coating of BBQ sauce over the chicken. Continue cooking for an additional 10 minutes, flipping and basting with more BBQ sauce every 2-3 minutes, until the internal temperature reads 165°F (74°C) using a meat thermometer.

Step 6

While the chicken is cooking, prepare the salsa. Dice the Roma tomatoes, red onion, and jalapeño. If you prefer milder salsa, remove the seeds and membrane from the jalapeño before dicing.

Step 7

In a medium bowl, combine diced tomatoes, onion, jalapeño, cilantro, lime juice, salt, and black pepper. Stir well to combine. Adjust seasoning to taste if needed.

Step 8

Transfer the cooked chicken to a serving platter and let rest for 5 minutes.

Step 9

Serve the BBQ chicken hot, topped with a generous spoonful of salsa or with the salsa on the side.
