Ingredients

  • 6 pieces large eggs
  • 4 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 2 stalks green onion, sliced thinly
  • 1 tablespoon fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces tortilla wraps
  • 4 pieces lettuce leaves
  • 0 optional toppings (sliced tomatoes, avocado)

Directions

Step 1

Place the eggs in a medium pot and cover them with cold water. Bring the water to a boil over medium-high heat.

Step 2

Once the water reaches a rolling boil, turn off the heat, cover the pot, and let the eggs sit for 10 minutes.

Step 3

Carefully transfer the eggs to a bowl of ice water and let them cool for 5 minutes. Peel the eggs and chop them into small cubes.

Step 4

In a large mixing bowl, combine mayonnaise, Dijon mustard, lemon juice, sliced green onion, fresh parsley, salt, and black pepper. Mix well to create the dressing.

Step 5

Add the chopped eggs to the bowl and gently fold everything together until evenly coated. Adjust seasoning to taste, if needed.

Step 6

Lay a tortilla flat on a clean surface. Place a lettuce leaf in the center of the tortilla, then spoon a generous portion of the egg salad on top.

Step 7

Add any optional toppings, such as sliced tomatoes or avocado, for extra flavor and texture.

Step 8

Wrap the tortilla tightly around the filling, tucking in the sides as you roll to create a burrito-like wrap.

Step 9

Repeat with the remaining tortillas and egg salad.

Step 10

Serve immediately or wrap in parchment paper or foil for an on-the-go meal.
