Ingredients

  • 250 grams Fresh spinach
  • 1 medium-sized (finely chopped) Onion
  • 2 (minced) Garlic cloves
  • 2 tablespoons (finely chopped) Fresh parsley
  • 2 Eggs
  • 1 cup Breadcrumbs
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup (for frying) Vegetable oil

Directions

Step 1

Wash the fresh spinach thoroughly and blanch it in boiling water for 1-2 minutes. Transfer it immediately to a bowl of ice water to stop the cooking process. Drain well and squeeze out as much excess water as possible. Chop the blanched spinach into small pieces.

Step 2

In a large mixing bowl, combine the chopped spinach, finely chopped onion, minced garlic, and chopped parsley.

Step 3

Add the eggs, breadcrumbs, and flour to the bowl. Mix well until a cohesive batter forms.

Step 4

Season the mixture with ground cumin, ground coriander, salt, and black pepper. Adjust seasoning to taste as needed.

Step 5

Heat the vegetable oil in a large skillet over medium heat.

Step 6

Using a spoon or your hands, scoop about 2 tablespoons of the batter and shape it into a small patty. Carefully place it into the hot oil. Repeat with the remaining batter, frying the fritters in batches to avoid overcrowding the pan.

Step 7

Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy. Transfer them to a plate lined with paper towels to drain any excess oil.

Step 8

Serve the fritters warm, optionally with a dollop of yogurt or tahini sauce on the side.
