Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric
  • 0.25 teaspoon Ground cinnamon
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Cherry tomatoes
  • 1 piece Red onion (small)
  • 2 tablespoons Fresh parsley (chopped)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 0.25 teaspoon Red chili flakes (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a small bowl, mix garlic powder, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper to create a spice rub.

Pat the chicken thighs dry with paper towels and rub them all over with the olive oil. Then evenly coat each piece with the spice rub.

Heat a large ovenproof skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear for about 3-4 minutes until the skin is golden and crisp. Flip the chicken and cook for another 2 minutes.

Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

While the chicken cooks, prepare the tomato relish. Dice the cherry tomatoes and finely chop the red onion.
