Ingredients

  • 2 tablespoons Butter
  • 1 medium Yellow onion, finely chopped
  • 1 medium Leek, white part only, finely sliced
  • 2 large Garlic cloves, minced
  • 2 tablespoons All-purpose flour
  • 4 cups Vegetable stock
  • 1 cup Heavy cream
  • 5 ounces Isle of Wight Blue Cheese (or Stilton), crumbled
  • 1 teaspoon Fresh thyme leaves
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 0 optional Crusty bread, for serving

Directions

Step 1

Melt the butter in a large saucepan over medium heat.

Step 2

Add the chopped onion, sliced leek, and minced garlic. Sauté for 5-7 minutes, stirring occasionally, until the onions are soft and translucent.

Step 3

Sprinkle in the flour and stir well to coat the vegetables. Cook for an additional 1-2 minutes to eliminate the raw flour taste.

Step 4

Gradually pour in the vegetable stock, whisking constantly to remove any lumps. Bring the mixture to a gentle simmer.

Step 5

Reduce the heat to low and let the soup simmer for about 15 minutes, stirring occasionally, until the vegetables are fully tender.

Step 6

Stir in the heavy cream and crumbled Isle of Wight Blue Cheese. Allow the cheese to melt into the soup, stirring well.

Step 7

Add the fresh thyme leaves and season with salt and black pepper to taste.

Step 8

Blend the soup until smooth using an immersion blender or transfer it to a blender in batches. Return the soup to the saucepan if necessary.

Step 9

Heat the soup gently over low heat, making sure not to boil, for another 2-3 minutes.

Step 10

Serve hot, accompanied by crusty bread if desired.
