Ingredients

  • 125 grams unsalted butter
  • 200 grams rolled oats
  • 50 grams plain flour
  • 150 grams Isle of Man Mature Cheddar cheese, grated
  • 1 large egg, beaten
  • 1 tablespoon honey
  • 2 tablespoons whole milk
  • 0.5 teaspoons smoked paprika
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper, freshly ground

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a square 20cm (8-inch) baking tin with parchment paper.

Step 2

In a medium saucepan over low heat, melt the butter and honey together. Stir occasionally until fully combined, then remove from heat and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the rolled oats, plain flour, smoked paprika, salt, and black pepper.

Step 4

Stir the grated Isle of Man Mature Cheddar cheese into the dry ingredients, ensuring it is evenly distributed.

Step 5

Pour the slightly cooled butter and honey mixture into the dry ingredients. Mix well until the oats are coated.

Step 6

Add the beaten egg and milk to the mixture. Stir until the batter comes together into a sticky consistency.

Step 7

Transfer the mixture into the prepared baking tin, spreading it out evenly and pressing it down firmly with the back of a spoon to create a compact layer.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the flapjacks are golden brown and slightly crisp around the edges.

Step 9

Remove the flapjacks from the oven and let them cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, slice into 8 squares or rectangles. Serve warm or at room temperature as a savory snack or pair with a hearty soup.
