Ingredients

  • 400 grams ground beef
  • 200 grams ground pork
  • 1 medium onion
  • 50 grams panko breadcrumbs
  • 50 milliliters milk
  • 1 large egg
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 3 tablespoons tonkatsu sauce
  • 1 tablespoon Worcestershire sauce
  • 100 milliliters water
  • 10 grams unsalted butter

Directions

Step 1

Finely dice the onion and sauté in a skillet over medium heat with 1 tablespoon of vegetable oil until translucent, about 5 minutes. Set aside to cool.

Step 2

In a small bowl, combine the panko breadcrumbs and milk. Let the breadcrumbs soak for 5 minutes to soften.

Step 3

In a large mixing bowl, combine ground beef, ground pork, sautéed onion, soaked breadcrumbs, egg, soy sauce, ketchup, salt, and black pepper. Mix well with your hands or a spoon until the ingredients are evenly incorporated. Be careful not to overmix.

Step 4

Divide the mixture into 4 equal portions and shape each portion into a patty about 1-inch thick. Use your thumb to make a slight indentation in the center of each patty to prevent it from puffing up while cooking.

Step 5

Heat the remaining 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the patties and cook for 3-4 minutes on each side, until both sides are browned.

Step 6

Reduce the heat to low, cover the skillet, and let the patties cook through for an additional 8-10 minutes. Remove the patties from the skillet and keep them warm.

Step 7

In the same skillet, add tonkatsu sauce, Worcestershire sauce, water, and butter. Stir well and simmer over low heat for 2-3 minutes, allowing the sauce to thicken slightly.

Step 8

Serve the hamburgers hot, topped with the sauce. Pair with steamed rice, mashed potatoes, or a fresh green salad for a complete meal.
