Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 medium, diced onion
  • 3 cloves, minced garlic
  • 1 can (15 ounces) tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Rinse and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Step 4

Add the minced garlic to the skillet and cook for another 1-2 minutes, stirring frequently.

Step 5

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.

Step 6

Stir in the cooked rice, 1 cup of the tomato sauce, Italian seasoning, salt, and black pepper. Mix well and cook for 2-3 minutes to combine the flavors.

Step 7

Stuff each bell pepper with the ground beef and rice mixture, pressing down gently to pack it tightly.

Step 8

Place the stuffed peppers upright in a baking dish. Pour the remaining tomato sauce and 1/2 cup of water around the peppers in the dish.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 10

Remove the foil, sprinkle shredded mozzarella cheese on top of each stuffed pepper, and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 11

Let the stuffed peppers cool for 5 minutes before serving. Enjoy!
