Peel and dice the potato into small cubes.
In a skillet over medium heat, cook the diced potato in a drizzle of oil until golden brown and tender, about 8-10 minutes. Remove from the skillet and set aside.
In the same skillet, cook the bacon slices until crispy. Remove and place them on a paper towel to drain. Chop the bacon into small pieces.
