Ingredients

  • 6 links Irish sausages
  • 4 large Russet potatoes
  • 4 tablespoons Butter
  • 0.5 cups Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 1 large Yellow onion
  • 2 tablespoons All-purpose flour
  • 1.5 cups Beef or chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1 cup Cheddar cheese
  • 0.5 teaspoons Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and chop the potatoes into chunks. Place them in a large pot, cover with water, add a pinch of salt, and bring to a boil. Cook for 15-20 minutes, or until tender.

Step 3

While the potatoes cook, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sausages and cook until browned and cooked through, about 8-10 minutes. Remove the sausages from the skillet and set aside.

Step 4

Using the same skillet, add the sliced onion and cook over medium heat until softened and lightly caramelized, about 5 minutes.

Step 5

Sprinkle the flour over the onions and stir to coat. Gradually add the beef or chicken stock, whisking to prevent lumps. Stir in the Worcestershire sauce and let the gravy thicken, about 2-3 minutes. Season with salt and pepper to taste.

Step 6

Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and 1/2 cup of milk, then mash until smooth and creamy. Season with salt and pepper to taste.

Step 7

Slice the cooked sausages into bite-sized pieces and arrange them in the bottom of a greased 9-inch pie dish or casserole dish.

Step 8

Pour the onion gravy evenly over the sausages.

Step 9

Spread the mashed potatoes over the top of the sausage and gravy mixture, smoothing it out with a spatula. Sprinkle the grated cheddar cheese evenly over the potatoes.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.

Step 11

For added color, sprinkle with a pinch of paprika before serving.

Step 12

Serve hot and enjoy your hearty Irish Sausage and Potato Pie!
