Preheat your oven to 200°C (400°F).
Cut the pork shoulder into bite-sized cubes and season with salt and black pepper. Dredge the pieces in flour to lightly coat them.
In a large ovenproof casserole dish or skillet, heat the butter and olive oil over medium-high heat. Brown the pork in batches to avoid overcrowding the pan. Remove and set aside.
Lower the heat to medium and add the chopped onion to the same pan. Sauté for 5 minutes or until softened.
Add the garlic, carrots, and celery, and cook for another 5 minutes.
Pour in the white wine to deglaze, scraping any browned bits from the bottom of the pan, and let it simmer for 2 minutes.
