Ingredients

  • 4 pieces Beef steaks (such as sirloin or filet mignon)
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 small Shallots, finely chopped
  • 60 milliliters Irish whiskey
  • 250 milliliters Heavy cream
  • 120 milliliters Beef stock
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Season both sides of the steaks with salt and black pepper.

Step 2

In a large skillet over medium-high heat, heat the olive oil and 1 tablespoon of butter.

Step 3

Place the steaks in the skillet and cook for 3-4 minutes per side for medium-rare, or to your desired level of doneness. Remove the steaks from the skillet, cover with foil, and let them rest.

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of butter.

Add the chopped shallots and sauté for 2-3 minutes until softened and fragrant.
