Ingredients

  • 250 grams all-purpose flour
  • 50 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 85 grams butter, cold and cubed
  • 100 grams dried fruit (raisins or currants)
  • 1 large egg
  • 100 milliliters whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon extra milk (for brushing)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Using your fingertips or a pastry cutter, rub the cold cubed butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Stir in the dried fruit (raisins or currants) to evenly distribute them throughout the mixture.

Step 5

In a small bowl, whisk together the egg, whole milk, and vanilla extract.

Step 6

Make a well in the center of the dry mixture and pour in the wet ingredients. Mix gently with a fork until the dough comes together. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface and knead it gently a few times to bring it to a smooth consistency.

Step 8

Pat the dough into a disc about 2 to 2.5 cm (¾ to 1 inch) thick, then use a round 6 cm (2.5-inch) cutter to cut out scones. Gather and re-roll scraps as needed.

Step 9

Place the scones onto the prepared baking sheet, leaving a little space between each one.

Step 10

Brush the tops of the scones with a little milk to help them brown beautifully in the oven.

Step 11

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and risen.

Step 12

Transfer the scones to a wire rack to cool slightly before serving.

Step 13

Serve warm or at room temperature with butter, jam, or clotted cream. Enjoy!
