Ingredients

  • 4 medium Russet potatoes
  • 2 cups (shredded) Green cabbage
  • 6 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 4 stalks (thinly sliced) Scallions (green onions)
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0 as needed for boiling potatoes Water

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 2

Bring the pot to a boil over medium-high heat, then reduce the heat and simmer until the potatoes are fork-tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the shredded cabbage and cook, stirring occasionally, until tender, about 5-7 minutes.

Step 4

In a small saucepan, heat the remaining 4 tablespoons of butter and heavy cream over low heat until warm. Do not boil.

Step 5

Once the potatoes are cooked, drain them and return them to the pot. Mash the potatoes using a potato masher or a fork until smooth.

Step 6

Stir the warm butter and heavy cream mixture into the mashed potatoes until fully combined and creamy.

Step 7

Fold the cooked cabbage and sliced scallions into the mashed potatoes. Season with the remaining 0.5 teaspoon of salt and 0.5 teaspoon of black pepper, adjusting to taste.

Step 8

Serve immediately as a delicious side dish. For added flavor, consider garnishing with an extra pat of butter on top of each serving.
