Ingredients

  • 4 tablespoons Butter
  • 1 large Yellow onion, diced
  • 2 cloves Garlic, minced
  • 3 medium Russet potatoes, peeled and diced
  • 2 cups Green cabbage, shredded
  • 2 medium Carrots, diced
  • 6 cups Chicken or vegetable stock
  • 2 teaspoons Fresh thyme leaves
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Green onions, chopped (for garnish)

Directions

Step 1

Heat a large soup pot over medium heat and melt the butter.

Step 2

Add the diced onion and minced garlic, cooking until softened and fragrant, about 3 minutes.

Step 3

Stir in the diced potatoes, shredded cabbage, and diced carrots. Cook for another 5 minutes, stirring occasionally.

Step 4

Pour in the chicken or vegetable stock and add the fresh thyme leaves. Bring the mixture to a boil.
