Ingredients

  • 500 grams cod fillets
  • 500 milliliters whole milk
  • 50 grams unsalted butter
  • 50 grams all-purpose flour
  • 2 leeks, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1.2 kilograms yellow potatoes, peeled and cubed
  • 100 milliliters heavy cream
  • 50 grams grated cheddar cheese (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Place the cod fillets in a large saucepan and cover with milk. Bring to a simmer over medium heat, then reduce the heat and allow the cod to poach gently for 8-10 minutes. Once cooked, remove the cod with a slotted spoon and set aside to cool. Reserve the poaching milk.

Step 3

In a separate large pot, bring water to a boil. Add the cubed potatoes and cook until they are fork-tender, approximately 15 minutes. Drain and return the potatoes to the pot to allow excess moisture to evaporate over low heat.

Step 4

Mash the potatoes until smooth. Add the heavy cream, 25 grams of butter, salt, and nutmeg (optional). Mix well and set aside.

In a medium-sized saucepan, melt the remaining 25 grams of butter over medium heat. Stir in the sliced leeks and cook for 3-4 minutes until softened.

Add the flour to the leeks, stirring to form a paste. Gradually pour in the reserved poaching milk, whisking constantly to avoid lumps. Continue to cook and stir until the sauce thickens.

Flake the cooled cod into bite-sized pieces and gently fold them into the sauce along with the chopped parsley and black pepper. Check seasoning and adjust as needed.

Spoon the cod mixture evenly into a deep 1.5-liter ovenproof dish. Spread the mashed potatoes over the top, smoothing to cover the filling completely.

If desired, sprinkle the grated cheddar cheese over the mashed potatoes for added flavor and a golden crust.

Bake in the preheated oven for 25-30 minutes, or until the top is lightly browned and bubbling around the edges.
