  • 2 large Eggs
  • 1 cup Whole milk
  • 0.5 cup Irish cream liqueur
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 0.5 cup Unsalted butter
  • 3 cups Powdered sugar
  • 0.25 cup Additional Irish cream liqueur
  • 4 oz Dark chocolate (melted)
  • 0.25 cup Heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, Irish cream liqueur, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed until the batter is smooth and fully combined.

Stir in the boiling water. The batter will be thin; this is normal.

Divide the batter evenly between the prepared cake pans.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

Drizzle the ganache over the top of the cake, allowing some of it to drip down the sides.
