Ingredients

  • 8 cups day-old bread (French or brioche)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 0.5 cup light brown sugar
  • 0.25 cup unsalted butter, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup golden raisins
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tablespoons unsalted butter (for caramel sauce)
  • 0.5 cup heavy cream (for caramel sauce)
  • 2 tablespoons Irish whiskey
  • 0.25 teaspoon salt (for caramel sauce)

Directions

Step 1

Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Cut the day-old bread into 1-inch cubes and place them in the prepared baking dish.

Step 3

In a medium-sized bowl, whisk together the whole milk, heavy cream, granulated sugar, light brown sugar, melted butter, eggs, vanilla extract, ground cinnamon, and ground nutmeg until fully combined.

Step 4

Pour the custard mixture evenly over the cubed bread, ensuring all the bread is soaked. Gently press the bread down with the back of a spoon to help the absorption process.

Step 5

Sprinkle the golden raisins evenly over the mixture and let the bread pudding sit for 10 minutes to soak.

Step 6

Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the custard is set in the center. Remove from the oven and allow it to cool slightly.

Step 7

While the bread pudding bakes, prepare the caramel whiskey sauce. In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a deep amber color. This may take 5-7 minutes.

Step 8

Add the unsalted butter to the melted sugar and whisk until fully incorporated. Be careful, as the mixture will bubble vigorously.

Step 9

Slowly pour in the heavy cream while whisking continuously. Continue to whisk until the sauce is smooth.

Step 10

Remove the saucepan from heat and stir in the Irish whiskey and salt. Allow the sauce to cool slightly.

Step 11

To serve, cut the bread pudding into squares and drizzle generously with the caramel whiskey sauce. Serve warm and enjoy!
