  • 4 medium potatoes, peeled and cut into 1.5-inch chunks
  • 2 medium parsnips, peeled and sliced into 1-inch pieces
  • 4 sprigs fresh thyme
  • 2 pieces bay leaves
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
