  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • 0.5 cup unsalted butter, cold and cubed
  • 1.25 cups all-purpose flour (for pastry)
  • 0.5 teaspoon salt (for pastry)
  • 3 tablespoons ice-cold water
  • 1 egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

To make the filling, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for 5 minutes until softened.

Add the minced garlic and cook for 1 minute until fragrant.
