Ingredients

  • 300 ml Strong black tea
  • 250 g Mixed dried fruits (raisins, sultanas, currants)
  • 100 g Light brown sugar
  • 225 g Self-raising flour
  • 1 large Egg
  • 1 tsp Ground cinnamon
  • 1 tsp Ground mixed spice
  • 0 Butter (for greasing)

Directions

Step 1

Brew the black tea and allow it to cool slightly. Place the mixed dried fruits in a large mixing bowl and pour the tea over them. Cover the bowl with a clean towel and let the fruits soak overnight or for at least 6 hours.

Step 2

Preheat the oven to 170°C (150°C fan)/325°F/Gas Mark 3. Grease and line a 2lb loaf tin with parchment paper.

Step 3

In a separate bowl, whisk together the egg and light brown sugar until combined.

Step 4

Sift the self-raising flour into the soaked fruit mixture. Add the ground cinnamon, ground mixed spice, and the egg-sugar mixture.

Step 5

Gently fold all ingredients together until a thick, cohesive batter forms. Be careful not to overmix.

Step 6

Pour the batter into the prepared loaf tin and smooth the top with the back of a spoon.

Step 7

Bake in the preheated oven for 90 minutes, or until a skewer inserted into the center comes out clean.

Remove from the oven and allow the loaf to cool in the tin for 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 9

Once cooled, slice and serve plain or with a smear of butter.
