Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 14.5 ounces diced tomatoes, with their juices
  • 15 ounces canned corn, drained
  • 15 ounces black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup cornmeal
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess fat.

Step 3

Add the diced onion, green bell pepper, and minced garlic to the skillet. Cook for another 3-5 minutes until the vegetables are softened.

Step 4

Stir in the diced tomatoes (with their juices), canned corn, black beans, tomato paste, chili powder, ground cumin, paprika, salt, and black pepper. Mix well and let simmer for 5 minutes. Remove from heat and transfer the mixture to a greased 9x13-inch baking dish. Sprinkle shredded cheddar cheese evenly over the top of the meat mixture.

Step 5

In a medium mixing bowl, whisk together cornmeal, all-purpose flour, baking powder, milk, egg, and vegetable oil until smooth. Pour the cornmeal mixture evenly over the top of the filling in the baking dish.

Step 6

Bake in the preheated oven for 25-30 minutes, or until the cornbread topping is golden brown and set.

Step 7

Remove from the oven and let cool for 5 minutes before serving. Garnish with additional cheddar cheese, sour cream, or chopped cilantro if desired.
