Ingredients

  • 1 cup Instant mashed potato flakes
  • 1 cup Boiling water
  • 1.5 cups All-purpose flour
  • 1 large Egg
  • 1 teaspoon Salt
  • 2 tablespoons Butter
  • 0.25 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

In a medium bowl, combine the instant mashed potato flakes and boiling water. Stir until smooth and let cool for a few minutes.

Step 2

Add the egg, salt, and half of the flour (about 3/4 cup) to the potato mixture. Mix well until a dough starts to form.

Step 3

Gradually add the remaining flour, a little at a time, while kneading the dough gently on a floured surface. Stop adding flour when the dough is soft but no longer sticky.

Step 4

Divide the dough into 4 equal portions. Roll each portion into a long rope about 1/2 inch in diameter.

Step 5

Cut the ropes into 1-inch pieces. If desired, roll each piece over the back of a fork to create ridges.

Step 6

Bring a large pot of salted water to a boil. Working in batches, drop the gnocchi into the boiling water and cook until they float to the surface (about 2-3 minutes). Use a slotted spoon to remove the gnocchi and transfer them to a plate.

Step 7

In a large skillet, melt the butter over medium heat. Add the cooked gnocchi and sauté until lightly golden, about 3-4 minutes.

Step 8

Serve immediately, topped with grated Parmesan cheese and fresh parsley, if desired.
