  • 2 Celery stalks, diced
  • 1.5 pounds Boneless, skinless chicken breasts
  • 8 cups Chicken broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Orzo pasta, uncooked
  • 0.25 cup Lemon juice, freshly squeezed
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Set your Instant Pot to the 'Sauté' setting and heat the olive oil. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 2

Add the minced garlic to the pot and cook for an additional 1 minute, until fragrant.

Step 3

Stir in the diced carrots and celery, stirring to coat them in the oil and aromatics.

Step 4

Place the chicken breasts on top of the vegetables. Pour in the chicken broth, and add the dried thyme, dried oregano, bay leaf, salt, and black pepper. Stir gently to combine.

Close the lid of the Instant Pot and ensure the vent is set to 'Sealing.' Use the 'Manual' or 'Pressure Cook' setting and set the timer for 8 minutes.

Switch the Instant Pot back to the 'Sauté' setting. Add the orzo pasta to the pot and simmer for 6-8 minutes, or until the orzo is tender, stirring occasionally.

Return the shredded chicken to the pot and stir in the lemon juice and lemon zest. Taste and adjust seasoning with additional salt and pepper, if needed.
