Ingredients

  • 2 cups instant mashed potato mix
  • 4 cups water
  • 1 cup milk
  • 2 tablespoons unsalted butter
  • 2 cups shredded cheddar cheese
  • 2 cups cooked ham, diced
  • 1 cup sour cream
  • 3 tablespoons green onions, chopped
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with olive oil or nonstick spray.

Step 2

In a medium saucepan, bring 4 cups of water to a boil. Remove from heat and stir in the instant mashed potato mix. Add the butter and milk, stirring until the potatoes are smooth and creamy. Set aside.

Step 3

In a large mixing bowl, combine the mashed potatoes with sour cream, garlic powder, salt, black pepper, and 1 cup of shredded cheddar cheese. Mix until well combined.

Fold in the diced ham and 2 tablespoons of chopped green onions into the potato mixture.
