Ingredients

  • 1 cup Dark soy sauce
  • 1 cup Palm sugar or dark brown sugar
  • 0.5 cup Water
  • 2 cloves Garlic, minced
  • 1 piece Star anise (optional)
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground white pepper

Directions

Step 1

In a medium saucepan, combine the dark soy sauce, palm sugar (or dark brown sugar), and water.

Step 2

Place the saucepan over medium heat and stir gently until the sugar dissolves completely.

Step 3

Add the minced garlic, star anise (if using), ground ginger, and ground white pepper to the mixture. Stir to combine.

Step 4

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 10-12 minutes, stirring occasionally. The sauce will begin to thicken and develop a syrup-like consistency.

Step 5

Test the consistency by dipping a spoon into the sauce. If it coats the back of the spoon, it is ready. Keep in mind that the sauce will thicken further as it cools.

Step 6

Remove the saucepan from heat and take out the star anise if added.

Step 7

Allow the sauce to cool completely before transferring it to a clean, airtight container or jar.

Step 8

Store the kecap manis in the refrigerator for up to 1 month. Use it as a condiment, marinade, or ingredient in your favorite Indonesian dishes.
