Ingredients

  • 6 large eggs
  • 4 cups water
  • 1 handful onion skins (from yellow or red onions)
  • 2 tablespoons black tea leaves or 2 tea bags
  • 4 tablespoons soy sauce
  • 1 teaspoon salt
  • 1 tablespoon palm sugar (or substitute with brown sugar)
  • 2 cloves garlic
  • 1 inch galangal (optional, peeled and sliced)
  • 1 stalk lemongrass (optional, bruised)
  • 2 large bay leaves

Directions

Step 1

Place the eggs in a pot and cover them with water. Bring to a boil over medium heat and allow the eggs to cook for 10 minutes.

Step 2

Remove the boiled eggs from the pot and place them in a bowl of ice water. Once cooled, gently crack the surface of each egg all around using the back of a spoon, but make sure not to remove the shells. The cracks will create the marbled effect.

In the same pot, add 4 cups of water, onion skins, black tea leaves (or tea bags), soy sauce, salt, palm sugar, garlic (crushed), galangal, lemongrass, and bay leaves.
