Ingredients

  • 20 pieces Spring roll wrappers
  • 250 grams Chicken breast or shrimp (finely chopped)
  • 1 medium Carrot (julienned)
  • 200 grams Cabbage (shredded)
  • 100 grams Bean sprouts
  • 3 cloves Garlic (minced)
  • 2 medium Shallots (finely chopped)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 0.5 teaspoons Ground white pepper
  • 1 teaspoon Salt
  • 3 tablespoons Cooking oil
  • 1 large Egg white (for sealing wrappers)
  • 500 milliliters Vegetable oil (for frying)

Directions

Step 1

Heat 3 tablespoons of cooking oil in a large pan over medium heat.

Step 2

Add the minced garlic and chopped shallots, and sauté until fragrant (about 2 minutes).

Step 3

Add the chopped chicken or shrimp to the pan and cook until fully cooked through (about 4-5 minutes).

Step 4

Add the julienned carrot, shredded cabbage, and bean sprouts to the pan.

Step 5

Stir in the soy sauce, oyster sauce, ground white pepper, and salt. Cook for another 3-4 minutes, stirring frequently, until the vegetables are tender but still crisp.

Remove the filling mixture from the heat and let it cool completely.

Lay out a spring roll wrapper on a clean surface with a corner pointing towards you (forming a diamond shape).

Spoon about 1-2 tablespoons of the filling onto the wrapper, close to the lower corner.
