  • 1 cup Boiling water
  • 1 cup Cold water
  • 1 cup Fresh raspberries
  • 1 cup Heavy cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 0 optional Mint leaves (optional, for garnish)

Directions

Step 1

In a medium-sized mixing bowl, combine the raspberry-flavored gelatin mix with 1 cup of boiling water. Stir until the gelatin is fully dissolved, approximately 2 minutes.

Step 2

Add 1 cup of cold water to the gelatin mixture and stir. Allow it to cool slightly for about 5 minutes.

Step 3

Divide the gelatin mixture evenly between four individual serving glasses or ramekins, filling each about halfway.

Step 4

Add a few fresh raspberries to each glass, gently pressing them into the gelatin layer. Place the glasses in the refrigerator to chill for 1.5 to 2 hours, or until the gelatin is fully set.

While the gelatin chills, prepare the cream layer. In a chilled mixing bowl, whip the heavy cream with an electric mixer on medium-high speed until soft peaks form, about 2-3 minutes.
