Ingredients

  • 2 sheets Puff pastry sheets
  • 2 medium-sized Apples (Granny Smith or Honeycrisp)
  • 4 tablespoons Granulated sugar
  • 2 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 1 tablespoon All-purpose flour
  • 2 tablespoons Unsalted butter
  • 1 large Egg
  • 1 teaspoon Water
  • 2 teaspoons Coarse sugar (optional, for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel, core, and dice the apples into small 1/4-inch cubes.

Step 3

In a mixing bowl, combine the diced apples with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and all-purpose flour. Stir well to coat the apple pieces evenly.

Step 4

Cut the puff pastry sheets into 4 equal squares each, resulting in 8 squares total.

Step 5

Place approximately 2 tablespoons of the apple mixture in the center of each puff pastry square.

Step 6

Divide the unsalted butter into small pieces and add a small piece on top of each apple mixture pile.

Step 7

Fold the puff pastry square corners toward the center, overlapping slightly to create a small packet, pinching gently to seal.

Step 8

In a small bowl, whisk together the egg and water to make the egg wash.

Step 9

Brush the egg wash over the tops of the puff pastry packets. If desired, sprinkle with coarse sugar for an extra crunch.

Step 10

Place the prepared puff pastry pockets on the lined baking sheet, leaving about 1 inch of space between each.

Step 11

Bake in the preheated oven for 18–20 minutes, or until the pastry is golden brown and puffed.

Step 12

Remove from the oven and let the pies cool slightly before serving. Enjoy warm or at room temperature!
