Ingredients

  • 1 cup Pumpkin puree
  • 1 cup Heavy cream
  • 0.5 cup Whole milk
  • 0.5 cup Brown sugar
  • 2 tablespoons Granulated sugar
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan, combine the pumpkin puree, heavy cream, and whole milk. Heat over medium heat until the mixture begins to steam, stirring occasionally. Do not let it boil.

Step 2

In a mixing bowl, whisk together the brown sugar, granulated sugar, egg yolks, vanilla extract, ground cinnamon, ground ginger, ground nutmeg, and salt until smooth and well combined.

Step 3

Slowly pour about 1/2 cup of the warm pumpkin mixture into the egg mixture, whisking constantly to temper the eggs and prevent curdling.

Step 4

Gradually add the egg mixture back into the saucepan with the remaining pumpkin mixture, stirring constantly over medium heat.

Step 5

Cook the mixture gently, stirring frequently with a wooden spoon or heatproof spatula, until it thickens enough to coat the back of the spoon. This should take about 8-10 minutes.

Step 6

Remove the custard from the heat and strain it through a fine-mesh sieve into a bowl to ensure a smooth texture.

Step 7

Let the custard cool to room temperature, then divide the mixture evenly among six small ramekins or serving dishes.

Step 8

Cover each ramekin with plastic wrap and freeze for at least 4 hours or overnight until firm.

Step 9

Before serving, let the custards sit at room temperature for 5-10 minutes to soften slightly. Optionally, garnish with whipped cream, a sprinkle of cinnamon, or crushed graham crackers.
