  • 1 teaspoon Instant espresso powder
  • 0.5 teaspoon Vanilla extract
  • 3 Egg yolks (from large eggs)
  • 4 Egg whites (from large eggs)
  • 0.25 teaspoon Cream of tartar
  • 1 tablespoon Powdered sugar (for dusting, optional)
  • 10 grams Butter (for greasing ramekins)
  • 1 tablespoon Granulated sugar (for dusting ramekins)

Directions

Step 1

Preheat your oven to 200°C (400°F). Place a baking sheet in the center of the oven.

Step 2

Generously grease four 6-ounce ramekins with butter and sprinkle the inside with granulated sugar, shaking out any excess. This step helps the souffle climb the sides as it bakes. Set ramekins aside.

Step 3

Melt the dark chocolate and unsalted butter in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth. Remove the bowl from heat and let cool slightly.

Divide the souffle mixture evenly among the prepared ramekins, filling them just below the rim. Level the tops with a spatula and run your thumb along the outer edge of each ramekin to ensure a clean edge for an even rise.

Step 9

Place the ramekins on the preheated baking sheet and bake for 12-15 minutes, or until the souffles have risen with a slight wobble in the center when gently shaken.

Remove from the oven and serve immediately. For an extra touch, dust the tops with powdered sugar before serving.
