Ingredients

  • 500 grams Yam (grated)
  • 100 grams Gram flour (besan)
  • 50 grams Rice flour
  • 2 pieces Green chilies (finely chopped)
  • 2 tablespoons Fresh coriander leaves (chopped)
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 0 as needed Water
  • 500 ml Vegetable oil (for deep frying)

Directions

Step 1

Peel and thoroughly wash the yam. Grate it using a box grater or food processor and transfer to a large mixing bowl.

Step 2

Add gram flour, rice flour, and all the spices (cumin seeds, red chili powder, turmeric powder, garam masala) to the bowl.

Step 3

Mix in the ginger paste, garlic paste, finely chopped green chilies, and coriander leaves.

Step 4

Sprinkle salt over the mixture and gradually add a small amount of water to form a thick, cohesive batter. The consistency should be sticky yet hold its shape.

Step 5

Heat vegetable oil in a deep frying pan or wok over medium heat. The oil should be around 180°C (350°F) for frying.

Step 6

Wet your palms slightly and take a small portion of the batter (about the size of a golf ball). Flatten it gently to form a patty-like shape.

Step 7

Carefully slide the shaped patty into the hot oil. Fry 3–4 fritters at a time, ensuring they don’t overcrowd the pan.

Step 8

Fry the yam fritters for 3–4 minutes per side, flipping occasionally, until golden brown and crispy.

Step 9

Use a slotted spoon to remove the fritters and drain them on a plate lined with paper towels.

Step 10

Serve the yam fritters hot with mint chutney, tamarind sauce, or ketchup for dipping.
