Ingredients

  • 500 g Beef (boneless, cubed)
  • 400 ml Coconut milk
  • 1 large Onion (finely chopped)
  • 2 medium Tomatoes (pureed)
  • 4 cloves Garlic (minced)
  • 1 tbsp Ginger (grated)
  • 2 Green chilies (slit)
  • 8 pieces Curry leaves
  • 0.5 tsp Turmeric powder
  • 1 tbsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Garam masala
  • 0.5 tsp Red chili powder
  • 2 tbsp Vegetable oil or ghee
  • 1 cup Water
  • 1 tsp Salt
  • 2 tbsp Fresh cilantro (chopped, for garnish)

Directions

Step 1

Heat the oil or ghee in a large pot or deep skillet over medium heat.

Step 2

Add the curry leaves and slit green chilies. Sauté for 30 seconds until aromatic.

Step 3

Add the chopped onion and sauté until golden brown, about 5-7 minutes.

Step 4

Stir in the garlic and ginger, and cook for another 1-2 minutes until fragrant.

Step 5

Add the turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Stir well to coat the aromatics with spices.

Mix in the pureed tomatoes and cook for 5-6 minutes, stirring occasionally until the mixture thickens and oil starts to separate.

Add the cubed beef and stir to coat the meat with the spice mixture. Cook for 5 minutes until the beef is lightly browned.

Pour in the coconut milk and water. Stir to combine, and bring the mixture to a boil.

Reduce the heat to low, cover, and let it simmer for about 45 minutes, stirring occasionally, until the beef is tender and the curry has thickened. Add more water if needed during cooking.

Stir in the garam masala and adjust the salt as needed. Simmer for an additional 5 minutes.

Turn off the heat and garnish with fresh cilantro.
