Ingredients

  • 300 grams fresh spinach
  • 3 medium potatoes
  • 1 medium onion
  • 1 medium tomato
  • 3 pieces garlic cloves
  • 1 inch ginger
  • 1 piece green chili
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon ground coriander
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 100 milliliters water

Directions

Step 1

Wash the spinach thoroughly, drain, and chop it into smaller pieces. Set aside.

Step 2

Peel and dice the potatoes into small cubes (about 1 inch each). Set aside.

Step 3

Finely chop the onion, tomato, garlic, ginger, and green chili.

Step 4

Heat vegetable oil in a large pan or skillet over medium heat.

Step 5

Add cumin seeds to the hot oil and sauté for 30 seconds until aromatic.

Step 6

Add the chopped onion and sauté for 2-3 minutes until translucent.

Step 7

Stir in the garlic, ginger, and green chili. Cook for another minute until fragrant.

Step 8

Add the diced potatoes and sprinkle turmeric powder, red chili powder, and ground coriander. Mix well to coat the potatoes with the spices.

Step 9

Cover the pan and let the potatoes cook for about 10 minutes, stirring occasionally to prevent sticking.

Step 10

Add the chopped tomato and cook for 3-4 minutes until it softens.

Step 11

Stir in the chopped spinach and add 100 milliliters of water. Mix well to combine.

Step 12

Cover the pan again and let it cook for another 10-12 minutes, until the potatoes are tender and the spinach is fully wilted. Stir occasionally.

Step 13

Sprinkle garam masala and salt into the dish. Mix well and adjust seasoning if needed.

Step 14

Serve hot as a side dish with roti, naan, or rice.
