Ingredients

  • 500 grams Potatoes
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro
  • 1 tablespoon Lemon juice
  • 2 units Garlic cloves
  • 1 teaspoon Fresh ginger
  • 1 unit Green chili

Directions

Step 1

Peel and dice the potatoes into small cubes (about 1-2 cm each).

Step 2

Finely mince the garlic, ginger, and green chili. Chop the fresh cilantro and set aside.

Step 3

Bring a pot of water to a boil, add a pinch of salt, and parboil the potatoes for 5-6 minutes. Drain them and set aside.

Step 4

Heat the vegetable oil in a large pan over medium heat.

Step 5

Add the cumin seeds and mustard seeds to the oil. Stir until the seeds start to sizzle and pop, about 30 seconds.

Add the minced garlic, ginger, and green chili to the pan. Sauté for 1-2 minutes until fragrant.
