Ingredients

  • 1 lb Pork shoulder, cubed
  • 2 tbsp Vegetable oil
  • 1 medium Onion, finely chopped
  • 4 Garlic cloves, minced
  • 1 tbsp Ginger, grated
  • 2 cups Tomatoes, pureed (fresh or canned)
  • 0.5 cup Yogurt, plain
  • 1 tsp Cumin seeds
  • 1.5 tsp Ground coriander
  • 1 tsp Ground turmeric
  • 1 tsp Paprika
  • 1.5 tsp Garam masala
  • 0.5 tsp Ground red chili (optional, for heat)
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1 cup Water
  • 2 tbsp Cilantro, chopped (for garnish)

Directions

Step 1

Heat the vegetable oil in a large, deep skillet or pot over medium heat.

Step 2

Add the cumin seeds and allow them to splutter for about 30 seconds.

Step 3

Add the chopped onion and sauté until golden brown, about 8-10 minutes.

Step 4

Stir in the garlic and ginger, cooking for 1-2 minutes until fragrant.

Step 5

Add the cubed pork, increase the heat to medium-high, and brown the meat evenly on all sides, about 6-8 minutes.

Step 6

Lower the heat and add ground coriander, turmeric, paprika, garam masala, and optional red chili. Stir well to coat the pork with the spices.

Step 7

Pour in the pureed tomatoes and mix thoroughly. Let the mixture cook for 5 minutes, stirring occasionally.

Step 8

Add the yogurt, salt, and sugar, stirring until the sauce is smooth and well combined.

Step 9

Pour in the water to adjust the sauce's consistency, then cover the pot and reduce the heat to low. Simmer for about 30 minutes, or until the pork is tender and the flavors are well combined.

Step 10

Taste the sauce and adjust seasoning with additional salt or spice if needed.

Step 11

Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
