Ingredients

  • 1 cup Couscous
  • 2 cups Whole milk
  • 1.5 cups Ripe mangoes, peeled and diced
  • 1/3 cup Sugar
  • 4 Cardamom pods, lightly crushed
  • 1 Cinnamon stick
  • 1/8 teaspoon Saffron strands
  • 1.5 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Chopped pistachios
  • 2 tablespoons Raisins
  • 1 cup Water

Directions

Step 1

In a medium saucepan, combine the milk, cardamom pods, cinnamon stick, and saffron strands. Heat the mixture over medium-low heat until it is warm but not boiling. Allow the spices to infuse for about 5 minutes, then remove from heat and strain the milk to remove the spices. Set aside.

Step 2

In a separate pot, bring 1 cup of water to a boil. Stir in the couscous and butter. Turn off the heat, cover the pot, and let it sit for 5 minutes until the couscous absorbs the water.

Step 3

Fluff the couscous with a fork, then pour the infused milk into the pot. Stir well to combine and return the pot to low heat.

Step 4

Add the sugar and cook the mixture for 5-7 minutes, stirring frequently, until it thickens and becomes creamy.

Step 5

Fold in the diced mangoes, raisins, and vanilla extract. Cook for another 2 minutes until the mangoes are warmed through.

Step 6

Remove the pot from heat and let the pudding cool slightly. Transfer it to serving bowls or glasses.

Step 7

Garnish each serving with chopped pistachios and a few extra saffron strands if desired. Serve warm or chilled.
