Ingredients

  • 1 head (medium) Cauliflower
  • 3 medium Potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garam masala
  • 1 teaspoon Red chili powder
  • 3 Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 1 teaspoon (adjust to taste) Salt
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Cut the cauliflower into small florets and the potatoes into 1-inch cubes. Rinse and pat dry.

Step 3

In a large bowl, combine the olive oil, cumin seeds, ground turmeric, ground coriander, ground cumin, garam masala, red chili powder, minced garlic, grated ginger, and salt. Mix well to form a spiced oil mixture.
