Ingredients

  • 2 cups sweet corn kernels (fresh, frozen, or canned)
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 2 tablespoons ghee (clarified butter)
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.25 teaspoon cayenne pepper (optional, for heat)
  • 2 tablespoons sugar
  • 0.75 teaspoon salt
  • 3 large eggs
  • 2 tablespoons chopped fresh cilantro (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish lightly with ghee or butter.

Step 2

In a medium saucepan, melt the ghee over medium heat. Add the flour and whisk continuously for 1-2 minutes to make a roux. The mixture will be slightly bubbly and aromatic.

Step 3

Gradually whisk in the milk and heavy cream. Cook for 3-4 minutes over medium heat, stirring constantly, until the mixture thickens slightly.

Step 4

Stir in the turmeric, cumin, coriander, cayenne pepper (if using), sugar, and salt. Remove from heat and let cool for a few minutes.

Step 5

In a large mixing bowl, lightly beat the eggs. Slowly whisk in the cooled milk and spice mixture to avoid scrambling the eggs. Once combined, add the sweet corn kernels and mix well.

Step 6

Pour the mixture into the prepared baking dish and smooth the top with a spatula.

Step 7

Bake for 35-40 minutes, or until the pudding is set and the top is lightly golden brown. A toothpick inserted in the center should come out clean.

Step 8

Remove the dish from the oven and let it cool for 5-10 minutes. Garnish with freshly chopped cilantro before serving.

Step 9

Serve warm as a side dish or enjoy it on its own. It's perfect for festive meals and cozy family dinners.
