Ingredients

  • 15.25 oz Yellow cake mix
  • 15 oz Mandarin orange segments in juice
  • 4 large Eggs
  • 0.5 cup Vegetable oil
  • 20 oz Crushed pineapple in juice
  • 5.1 oz Instant vanilla pudding mix
  • 16 oz Whipped topping (Cool Whip or similar)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x13-inch baking pan, or spray with nonstick cooking spray.

Step 2

In a large mixing bowl, combine the yellow cake mix, mandarin orange segments (with juice), eggs, and vegetable oil. Mix on medium speed with an electric mixer until the batter is smooth and the oranges break apart slightly, about 2-3 minutes.

Step 3

Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Step 4

While the cake is cooling, prepare the topping: In a medium bowl, combine the crushed pineapple (with juice) and the instant vanilla pudding mix. Stir until the pudding mix is fully dissolved and the mixture is thickened.

Step 5

Fold the whipped topping into the pineapple and pudding mixture until fully combined. Cover and refrigerate until ready to use.

Step 6

Once the cake is completely cooled, spread the frosting evenly over the top of the cake using a spatula.

Step 7

Refrigerate the frosted cake for at least 1 hour to allow the flavors to meld together and the topping to set.

Step 8

Slice into squares and serve chilled. Enjoy the cool, citrusy delight!
