Ingredients

  • 8 pieces Lamb chops
  • 4 tablespoons Olive oil
  • 4 cloves Garlic cloves
  • 2 tablespoons Fresh rosemary
  • 1 tablespoon Fresh thyme leaves
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoons Red pepper flakes (optional)

Directions

Step 1

Trim any excess fat from the lamb chops and pat them dry with paper towels.

Step 2

In a large bowl, combine olive oil, minced garlic, chopped rosemary, thyme leaves, lemon juice, lemon zest, salt, black pepper, and red pepper flakes (if using). Mix well to make the marinade.

Step 3

Place the lamb chops in the bowl with the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap or transfer the chops to a resealable plastic bag. Let them marinate in the refrigerator for at least 1 hour or up to 8 hours for more intense flavor.

Step 4

Remove the lamb chops from the refrigerator about 30 minutes before cooking to bring them to room temperature.

Step 5

Heat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

Step 6

Cook the lamb chops for 3 to 4 minutes per side for medium-rare, or until they reach your desired level of doneness. Use an instant-read thermometer to check the internal temperature (medium-rare is about 145°F/63°C).

Step 7

Once cooked, transfer the lamb chops to a plate and let them rest for 5 minutes to allow the juices to redistribute.

Step 8

Serve the lamb chops warm, garnished with additional fresh herbs if desired.
