Ingredients

  • 2 pounds large shrimp (peeled and deveined)
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons lemon juice
  • 0.75 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons dill (fresh, chopped)
  • 1 piece red onion (small, finely diced)
  • 0.75 cup celery (diced)

Directions

Step 1

Preheat a large pot of water over medium-high heat and season with 1 tablespoon of kosher salt.

Step 2

Bring the water to a boil and add the shrimp. Reduce the heat to medium, and poach the shrimp for 3-4 minutes, or until they are pink and opaque.

Step 3

Remove the shrimp from the water and immediately plunge them into an ice bath to stop the cooking process. Once chilled, pat them dry with paper towels.

Step 4

Peel and devein the shrimp if not already done. Cut larger shrimp into bite-sized pieces if desired.

Step 5

In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, whole grain mustard, lemon juice, 1 teaspoon kosher salt, and 1 teaspoon black pepper.

Step 6

Gently fold in the cooked shrimp, celery, red onion, and fresh dill into the dressing mixture until the shrimp are evenly coated.

Step 7

Cover and refrigerate the shrimp salad for at least 30 minutes to allow the flavors to meld together.

Step 8

Serve chilled on a bed of lettuce, with crackers, or as a filling in sandwiches.
