Ingredients

  • 1.5 cups Rolled oats
  • 0.5 cups Almond flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Sea salt
  • 1 cups Mashed ripe banana
  • 0.25 cups Unsweetened almond milk
  • 0.25 cups Pure maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cups Mini dark chocolate chips
  • 0.25 cups Optional: Chopped walnuts or pecans

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the rolled oats, almond flour, baking powder, ground cinnamon, and sea salt. Mix well to break up any clumps.

Step 3

In a medium bowl, mash the ripe banana until smooth. Stir in the almond milk, maple syrup, and vanilla extract until fully combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir with a spatula until a thick, uniform batter forms. Be careful not to overmix.

Step 5

Gently fold in the mini dark chocolate chips and optional nuts, if using.

Step 6

Using a medium cookie scoop or two spoons, drop 12 mounds of batter onto the prepared baking sheet, about 2 inches apart. Slightly flatten each mound with the back of the spoon to achieve a ‘muffie’ shape.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the tops are firm to the touch.

Step 8

Remove from the oven and let the muffies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy your freshly baked, healthy chocolate chip muffies! Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
