Ingredients

  • 2 cups (packed) Fresh cilantro
  • 3 tablespoons Tamarind pulp
  • 2 pieces Green chilies
  • 2 pieces Garlic cloves
  • 1 inch piece Ginger
  • 1 teaspoon Roasted cumin powder
  • 1 teaspoon Chaat masala
  • 0.5 teaspoon Salt
  • 1 teaspoon Granulated sugar
  • 0.25 cup Water
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the fresh cilantro thoroughly under running water to remove any dirt. Roughly chop the leaves and stems.

In a blender or food processor, add the chopped cilantro, tamarind pulp, green chilies, garlic cloves, ginger, roasted cumin powder, chaat masala, salt, and sugar.

Step 3

Pour in 1/4 cup of water to help with blending and blend the mixture until smooth. Stop occasionally to scrape down the sides of the blender if needed.

Step 4

Taste the chutney and adjust salt, sugar, or tamarind for a perfect balance of flavors.

Step 5

Once blended, transfer the chutney to a serving bowl and stir in the lemon juice to enhance the tanginess.

Step 6

Serve fresh as a dip with snacks like samosas or pakoras, or use as a spread in wraps and sandwiches. Refrigerate any leftovers in an airtight container for up to 3-4 days.
