  • 1 tsp fresh ginger, minced
  • 1 red bell pepper, diced
  • 2 cups broccoli florets
  • 1 cup carrots, thinly sliced
  • 1 cup unsalted cashews
  • 2 green onions, thinly sliced
  • 2 cups white rice (optional, for serving)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.

Step 2

Add 2 tablespoons of cornstarch and 1 tablespoon of soy sauce to the chicken. Toss to coat evenly and set aside to marinate for 10 minutes.
