Ingredients

  • 500 grams Pork shoulder or tenderloin
  • 60 ml Olive oil
  • 30 ml Lemon juice
  • 3 Garlic cloves, minced
  • 2 teaspoons Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 Red onion, cut into chunks
  • 1 Bell pepper, cut into chunks
  • 8 Wooden skewers, soaked in water for 30 minutes
  • 4 Pita bread
  • 200 ml Tzatziki sauce
  • 2 Tomatoes, sliced
  • 1 Cucumber, sliced

Directions

Step 1

Cut the pork into approximately 2.5 cm (1 inch) cubes and set aside in a large bowl.

Step 2

In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to make the marinade.

Step 3

Pour the marinade over the pork cubes. Toss the pork to ensure all pieces are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for enhanced flavor.

Step 4

While the pork marinates, soak the wooden skewers in water for 30 minutes to prevent them from burning on the grill.

Step 5

Preheat your grill to medium-high heat.

Step 6

Thread the marinated pork cubes onto the skewers, alternating with chunks of red onion and bell pepper.

Step 7

Place the skewers on the hot grill and cook for 10-15 minutes, turning occasionally, until the pork is cooked through and slightly charred on the edges.

Step 8

While the meat cooks, warm the pita bread on the grill for about 1-2 minutes per side.

Step 9

Serve the souvlaki on warm pita bread with tzatziki sauce, sliced tomatoes, and cucumber. Optionally, add a sprinkle of fresh oregano or parsley for garnish.
