Ingredients

  • 3 medium leeks
  • 4 medium russet potatoes
  • 2 tablespoons unsalted butter
  • 2 garlic cloves
  • 5 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme
  • 2 tablespoons chopped chives (optional, for garnish)

Directions

Step 1

Trim the dark green tops and roots off the leeks, leaving the white and light green parts. Slice the leeks lengthwise, then rinse thoroughly under cold water to remove any grit. Slice the leeks into thin half-moons.

Step 2

Peel the potatoes and dice them into 1-inch cubes.

Step 3

In a large pot, melt the unsalted butter over medium heat. Add the sliced leeks and sauté for 5-7 minutes until softened but not browned.

Step 4

Mince the garlic cloves and add them to the pot. Cook for an additional minute until fragrant.

Step 5

Add the diced potatoes, vegetable broth, salt, black pepper, and fresh thyme to the pot. Stir well and bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, or until the potatoes are tender.

Step 7

Using an immersion blender, purée the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and purée, then return it to the pot.

Step 8

Stir in the heavy cream and heat the soup over low for 2-3 minutes, being careful not to let it boil.

Step 9

Taste the soup and adjust the seasoning with additional salt or pepper, if needed.

Step 10

Ladle the soup into bowls, garnish with chopped chives if desired, and serve warm.
