Ingredients

  • 2 cups All-purpose flour
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter, cold and cubed
  • 0.5 cups Granulated sugar
  • 1 cup Light corn syrup
  • 0.5 cups Brown sugar, packed
  • 0.25 cups Unsalted butter, melted
  • 2 teaspoons Vanilla extract
  • 3 large Eggs
  • 2 cups Pecans, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper, leaving an overhang for easy removal.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

Step 3

Press the mixture evenly into the prepared baking pan, creating a crust layer. Bake the crust in the preheated oven for 20 minutes, or until lightly golden. Remove and set aside to cool slightly.

Step 4

In a medium saucepan over medium heat, combine the corn syrup, brown sugar, and melted butter. Stir until the sugar is fully dissolved, then remove from heat.

Step 5

In a separate bowl, whisk the eggs and vanilla extract together. Slowly add the slightly cooled corn syrup mixture to the eggs, whisking constantly to avoid cooking the eggs.

Step 6

Stir the chopped pecans into the filling mixture, then pour the filling evenly over the pre-baked crust.

Step 7

Bake in the oven for 30 minutes, or until the filling is set and slightly puffed. Remove from the oven and allow to cool completely in the pan.

Step 8

Once cooled, use the parchment overhang to lift the pecan pie squares out of the pan. Cut into 16 squares and serve. Store leftovers in an airtight container at room temperature for up to 3 days.
